Recipe: Mexican Chef Salad



This meal is one of our favourites. We agreed while eating this that we could both happily eat it every week. I don't think we'll probably go that far but I'm guessing we'll eat it quite a bit over the summer. The recipe originally came from Justin's mom and we've barely needed to mess with it unlike so many of the other recipes we try. While we haven't changed much, it's a super simple recipe and very adaptable to what you have on hand. This is our basic recipe but be sure to play with it and find out what your family likes best!



Mexican Chef Salad

1 pound of ground pork
2 cups cooked beans or 1 can, drained (we like light red kidney best)
1 medium onion, diced
garlic, cumin, chili powder to taste


Brown pork in a large skillet with onion and spices. Add beans and cook until warmed thoroughly.

Serve over a large green salad and top with shredded cheese, crushed corn chips, and thousand island dressing.
